If you need a quick and easy dip to serve this summer, this ones for you. I made this for the 4th of July today along with this one and they were a big hit! Both are super easy and great to take on the boat or anywhere you don’t have access to an oven. They are served chilled or room temperature and definitely a crowd pleaser.
Fiesta Ranch Dip
16 oz Sour Cream
1 Cup Monterey Jack or Cheddar Cheese
1 can Hot Rotel (drained) You can use original if you don’t like spicy
1 can Mexicorn (drained)
1 packet Ranch Seasoning Mix
3 green onions chopped
Mix all ingredients together. Refrigerate for 1 hour or more. We let it marinate over night and it was perfect to let all the flavors come out.
Serve with Frito Scoops, Ruffles or any of your favorite tortillas!
