Scenes From Our Weekend

Happy Monday!  We had a pretty fun-filled weekend of activities planned and ended up with a great weekend.

Friday

Friday night we had Emily Ley and her family over for dinner.  They have lived in Tampa,FL for the past ten years, but our originally from Pensacola. They just moved back to Pensacola August 1st and we’re so happy to have them here! Emily and I are instagram friends that got to meet briefly for the first time last year!  She is just as sweet and adorable in person as she seems online.  And her family?  They are precious and my kids are ready to have them all move in to stay and play forever!

So we planned this Friday evening dinner to have the families all together.  We grilled out steaks, the kids were so sweet to each other, and we just had a blast catching up.

Brody and I made these Butterscotch Maple No Bake cookies from Mix and Match Mama Friday afternoon to have for dessert.  They were a hit too.  In my opinion, you could use about half the amount of sugar that is called for and still taste as good.

Butterscotch Maple No Bake Cookies 
Ingredients
2 cups sugar
1 stick butter
1/2 cup milk
1 cup peanut butter
2 tablespoons maple syrup
3 cups oatmeal
1 cup butterscotch chips
Wax paper for cooling
In a heavy saucepan over medium-high heat, bring sugar, butter and milk to a boil.  Boil about a minute, then stir in peanut butter, syrup and oatmeal.  Remove from heat and fold in your chips.
Drop by the tablespoon full on to wax paper to finish cooling (and they’ll harden up).  Once cooled, store in an airtight container.
There is something so special about making cookies with your kiddos.  And the best part about these cookies…you don’t have to wait for them to come out of the oven!
The kids broke out the dress up bin and had a blast playing with all the Star Wars costumes and put on performances for us.

Saturday

Saturday our best friends had the sweetest 5th birthday party!  It was all about the unicorns.  They had a real unicorn and face painter at the park and the kids had a ball.   Do you see how pretty they dress up this unicorn???

Saturday night we had plans to go check out the newest restaurant that just opened in Pensacola called The District.  The decor was really fabulous and we were all excited to go see how the food and bar scene looked.  Upstairs is a a large open space that has a bar, tons of great seating, a beautiful balcony and a piano player to round out the ambiance.  I felt like I was in a pretty cool hotel lounge with a New Orleans flair.  This was the first weekend the restaurant was open, so the staff seemed to be running around like chickens with their heads cut off; but I think a few more weeks of practice, and they will have it down!

I had the lobster bisque as an appetizer which was delicious and we also order the lamb lollipops that were a huge hit as well as the beef carpaccio.  Everyone got steaks except for me.  I tried the grilled Red Snapper that was pretty good with the lobster risotto.  I really enjoyed the vibe of the whole restaurant and I’m so happy to have another wonderful steak and seafood restaurant in town!  Be sure to go check it out if you are local!

Sunday

Sunday we literally did nothing.  Our dog Bella started getting sick Saturday night and we were pretty worried about her.  Matt was kind enough to take her to the emergency vet on Sunday morning while I cooked waffles at home for the kiddos.  We really think the dog has bad anxiety problems.  She’s thankfully doing a ton better today, but I will take her tomorrow to our regular vet and get her checked out again.  We spent the day hanging at the house and resting. I needed some rest after a busy weekend!!
