Last weekend it was in the twenties and we broke out all of our cold weather clothes and this weekend we put on our swimsuits and headed to the beach because it was in the seventies!! What a crazy January, but this girl isn’t complaining. I loved my one weekend of cold weather, but now I’m just ready for summer! Hopefully this weekend wasn’t a total tease.
Some girlfriends of mine from college were going to be down in Seaside for a long holiday weekend with all of their kiddos. I decided to run down there for one night with Madelyn to see everyone and to all of our surprise, we ended up spending an entire day at the beach. The kids had a ball and we loved getting some much needed vitamin C. It was fun to catch up with old friends and to meet the kids. It was also so fun to have some one-on-one time with Madelyn. Again, it reminded me how much easier it is when I just have one kid 🙂
We spent the rest of the weekend watching football (when will it be over????) and snuck in a little more beach time. We cooked an amazing dinner Sunday night from Ina’s cookbook that I have to share with you guys. I have a bunch of recipes I need to share soon. I’ve been cooking a lot from the new Skinnytaste Fast and Slow cookbook lately. Hope everyone had a wonderful holiday weekend!

The weather around here really is crazy! It was near 80 here in GA this weekend. We always have a few warm days this time of year, but not that warm and not for this long! It’s been crazy!
