Spinach & Sausage Tortellini Soup

I made this recipe during a cold front we were having and I loved the way it turned out. I had some hot Italian sausage leftover and then also some Jimmy Dean Maple Sausage and I actually ended up combining the two. I think the little bit of sweet and spicy together turned out great! But you can obviously use any type of sausage you would ike.

Spinach & Sausage Tortellini Soup

Ingredients:

  • 3 cups cooked Italian sausage
  • 3 cups uncooked tortellini
  • 3 cups water
  • 1 can evaporated milk
  • 6 chicken bouillon cubes
  • 1 28 oz can crushed tomatoes
  • 1 16 oz can Italian diced tomatoes, semi drained
  • 1 10oz bag baby spinach
  • 1 tbsp. oregano
  • 1 tbsp. parsley
  • 1 tbsp. chives
  • Salt & pepper to taste
  • Parmesan cheese
  • Green Onions (optional)

Directions:

  1. Put all ingredients except tortellini and spinach in a large pot and bring to a boil.
  2. Reduce the heat and allow to simmer about 15 minutes.
  3. Add tortellini and allow to a boil for a few minutes and add in spinach.
  4. Sprinkle with freshly grated Parmesan cheese and green onions and serve.

Tip: Make sure to use a large pot. My first one wasn’t big enough and then I ended up having to pour it into an extra large one before I put the tortellini and spinach in to make sure it all fit. And no one wants to have to dirty two pots ! Ha!

Also, make sure you wait until the very end to put your tortellini in. I put mine in a little too soon and you can see how huge they got. I also think it would be amazing with some mini tortellini if you can find those.
