This has probably become my favorite go-to dip lately because it’s so incredibly refreshing for the summer. It makes for the perfect dip to take on the boat or out to the beach because it’s good chilled or room temperature and the longer the beans, corn and onions marinate in the dressing; the better it tastes!! I feel like I usually tend to have these ingredients around the house and it takes maybe 4 minutes to throw together. You need to try this.
Black Bean, Corn & Feta Dip
1 can black beans, drained and rinsed
1 can shoe peg corn, drained
1 – 6 oz. package crumbled feta cheese
4 scallions, chopped
1/3 cup apple cider vinegar
1/3 cup olive oil
1/3 cup sugar
Chop scallions. Combine scallions with black beans, corn, and crumbled feta. Whisk together vinegar, olive oil, and sugar. Pour over other ingredients and toss. Chill. Serve with tostito scoops.

Pan Seared Fish
Soaked fish in lemon water for 30 min. Sprinkle fish with pepper and Tony Catcher re’s and roll in flour. Melt butter in skillet and pan fry for a few minutes on each side.
Roasted Red Potatoes
Cut potatoes as small as you’d like and mix with olive oil, salt, pepper, and sprinkle with dried oregano. Bake in oven on 425 for around 30-40 minutes. A few minutes before you take them out, sprinkle with parmesan cheese! (Thanks Hayden Statham for this recipe!)Balsamic Roasted Brussel Sprouts with Pancetta
Cut stem off sprouts and slice them length-wise. Toss in olive oil and balsamic with salt and pepper. Lay out on cookie sheet with the pancetta. Roast in a 425 oven for around 25min or until your level of crispiness. As you can see, I love them crispy!! I swear these things were like candy!

{Plates from C Wonder Store}Hope you guys can enjoy one or some of these recipes!! I’ve become obsessed with roasting vegetables lately as I love the crispiness of them. My husband doesn’t like things as burnt as I do, so sometimes I have to compromise!!

I love crispy, roasted veggies! Brussel and pancetta? That sounds amazing! I make the same dip basically, but without black beans. I am definitely trying this with them! I was in C. Wonder (again) and still haven't pulled the trigger on these plates. I need them!!

That meal looks so good!! I love roasted red potatos, I could eat them everyday! I roasted brussel sprouts once, but the smell was so bad through out the house that I have been afraid to make them ever since! Does this happen to you?

i cooked brussels last night in the oven for the first time, but on a lower temp & less time. DEF will try your version. i like them crispy too!
as far as that black bean dip – YUM. i make one too – except with avocado. the only thing bad is you have to eat it the day off. this is a good idea if you want leftovers!
