The temperatures have dropped into the low 70’s here in North Florida and I’ve slowly transitioned into all things pumpkin and apple for Fall. Matt and the kids love an easy breakfast in the morning that they can grab and go and they were asking for some new muffins. I got inspired by the idea of an apple cider donut muffin and loved that I could make them into little mini muffins for my kids.
I didn’t have time to run to the store, but was able to hop on my Walmart.com app and schedule some groceries to be delivered. They are always staying on top of new and trending items and I knew they would already have Fall items in stock and at a great price! So when apple cider and apple butter were on my list of ingredients, they had me covered and had them delivered to my door that afternoon.

Apple Cider Donut Muffins
Ingredients
- 2 cups flour
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- ½ teaspoon salt
- 2 teaspoons cinnamon
- 2/3 cup dark brown sugar
- 1 egg
- ½ cup apple butter
- 1 teaspoon vanilla extract
- 1/3 cup honey
- 1/3 cup apple cider
- 1/3 cup vanilla yogurt
- 2 tablespoons vegetable oil
Muffin Topping
- 4 tablespoons unsalted butter
- ½ cup sugar
- 3 tablespoons cinnamon
Instructions
- Preheat oven to 400°F and grease a mini muffin pan.
- In a large mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon and brown sugar.
- In another large bowl, whisk together the egg, apple butter, vanilla extract, honey, apple cider, yogurt and oil.
- Pour the wet ingredients into the dry ingredient mixture and whisk until blended.
- Spoon the batter into muffin pan until about 3/4 full. Bake for approximately 10 minutes and cool on a wire rack.
- Meanwhile, melt butter for muffin topping in the microwave.
- In a separate dish, combine ½ cup sugar with 3 tablespoons cinnamon.
- White muffins are cooling, brush each top with butter and roll in sugar mixture until coated.
