Halloween Dinner Party | Brown Butter Pumpkin Tortellini

I have been talking about the “transition to fall” for quite awhile now, and since we live in Florida, the transition takes a little longer than most. But fall is definitely here, and I’m embracing it! As we get ready for Halloween and all that comes with it, I thought I would share a fall and Halloween-themed dinner party that I gave recently. I found the perfect cozy recipe from Half-Baked Harvest, and thought I would modify it a bit to accommodate my group.

The best part? All of the ingredients came from a quick order on Walmart’s online grocery app, and my groceries were delivered straight to my door. I would normally pick out many of these items at my specialty grocery store, but this online order saved me so much time. I was able to get the same fresh ingredients at a fraction of the price!  It made throwing this dinner party so much easier.

I’ll take you through the recipe, and I’ve linked all ingredients below for you to make your own online shopping list. I tried to use organic store brands when possible, and I was so pleased with the quality and savings.

This recipe is so perfect for the season, and my guests raved about it!

 

Brown Butter Pumpkin Tortellini

Ingredients

Directions

1. In a large skillet, melt together 2 tablespoons butter with the sage. Stir occasionally, until the butter is browning and the sage is crisp, for several minutes. Remove the sage leaves from the butter and set aside.

2. To the skillet, add the olive oil, shallot, garlic, and oregano. Cook until the shallots begin to caramelize, about 5 minutes. Reduce the heat to low, add the tomato paste, pumpkin, and red pepper flakes, and cook 4-5 minutes, until thickened. Stir in the vodka, and cook another 2 minutes. Stir in the cream, 1 tablespoon butter, and the parmesan. Add the chicken and spinach leaves, if desired. Season and simmer over low heat.

3. Bring a large pot of salted water to a boil. Add the tortellini and cook according to package directions until al dente. Just before draining, remove 1 cup of the pasta cooking water.

4. Add the tortellini to the vodka sauce, tossing to coat. If needed, thin the sauce with pasta cooking water.

5. Serve immediately. Top each serving with crispy sage, parmesan, or however you like. Enjoy!

I served this with Marketside garlic knots, a quick Caesar salad kit, and roasted some fresh broccoli on the side. It was such a beautifully simple and satisfying meal!

Last, but certainly not least…I have to show you my Halloween tablescape! It was an added bonus to save so much money and time by using Walmart for the groceries. I got to devote a little more to the ingredients of my tablescape. Win-win! 😉 This was a bit different from my usual style, but super fun to put together!
