Healthy Monster Cookies

I made these cookies last week for the kids and I thought they were yummy!  I probably liked them a little more than the kids did but it’s because I love all desserts that are made with peanut butter!!! You will notice the recipe doesn’t call for any flour.  Instead it is just made with peanut butter, sugar, oats and a few other ingredients which make the cookies a little more dense and a little less fluffy, if you will.  We just happened to have all the ingredients for these cookies at the house when I stumbled upon the recipe, so I had to try them!  I hope you enjoy.

HEALTHY MONSTER COOKIES

Yield: 10 Large Cookies

INGREDIENTS:

  • 1 cup natural peanut butter (just peanuts and salt)
  • 2 tablespoons melted unsalted butter
  • 2/3 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 3/4 cup old fashioned oats
  • 1 teaspoon baking soda
  • 1/4 cup dark chocolate chips
  • 1/4 cup M&M’s
  • Flaky sea salt for sprinkling on top

INSTRUCTIONS:

HOW TO COOK HEALTHY MONSTER COOKIES

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, mix together the peanut butter, melted butter, coconut sugar, vanilla and eggs. Add in the oats, baking soda, chocolate chips and M&M’s and stir to combine.
  3. Use a large ice cream scoop to scoop the dough into balls and place on the baking sheet 3 inches apart (these cookies spread quite a bit). Gently press the cookies down to flatten if you want thinner cookies. Place a few extra chocolate chips and M&M’s on top of the cookies and sprinkle with sea salt. Bake for 8-10 minutes or until the edges are slightly brown. They may look slightly underdone but they will continue to bake one they’re removed from the oven. Let them sit for 5 minutes before transferring to a wire rack to cool completely.
