Matts Mini Potato Bake

We’re here today to share one of Matt’s favorite “made-up” recipes that he has been making for a long time and is always delicious!! He started making it for friends and family and they all loved it, so he said I could share it on here 🙂

This recipe has evolved and can totally be made to your liking.  This side is great if you are grilling chicken, steaks, fish, etc.  It is honestly even better for leftovers the next day.

Matts One Pan Mini Potato Bake
Serves 6 people

Ingredients

Brush olive oil on bottom n sides of big casserole dish liberally
1.5 lbs red small potatoes cubed or halved
1 to 1 1/2 container sliced mushrooms
1/2-3/4 Vidalia onion sliced/diced big pieces
3-4 sticks conecuh sausage sliced in 1/2” pieces
8 cloves minced garlic pressed
Half red bell pepper diced (optional, we often omit this too)
Parmesan cheese
Olive oil on top n stir
Cavenders Greek seasoning stir n season n stir
Black pepper light n stir
1- stick of bacon on top for flavor

Instructions

350 degrees for 30-45 minutes
Stir every 10-15 minutes check thickness of potatoes. Check potatoes to feel for soft n taste. Done when satisfied with softness of potatoes
Add more Parmesan on top. Stir again n serve

They don’t look too pretty, but I promise they will be a hit!
