I’m extra excited to share a recipe with you guys today because I’m actually sharing a recipe of Stephanie’s from Stephanie Spring. We are doing a little recipe swap and I quickly knew exactly which recipe I wanted to steal of hers. I have been on such a soup kick lately (when the weather has actually been cold here in Florida) and I loved the sound of this Potato, Sausage and Leek Soup. It’s hearty with just a few ingredients, so it makes for an easy weeknight meal. Stephanie makes it look mouth-watering with her beautiful photos too!

All you need for this recipe is:
5 russet potatoes (peeled and cubed)
6 cups chicken stock
2 leeks
1/2 pound sausage
1 cup whole milk
salt to taste
parsley for garnish
