I recently had a friend give birth to her 3rd baby boy and I wanted to bring her family some dinner! I decided to go with one of my favorites – a breakfast quiche. I love a quiche because I eat them for breakfast, lunch and dinner. When I wrote this freezer friendly meal post a couple months back, I asked for you guys to share some of your favorite meal ideas to bring to new families. A lot of you mentioned breakfast food because us new Mamas always need something easy to grab in the mornings.
So I made this quiche and sent it with an easy salad so that they could enjoy it for dinner and then she could have the leftovers for breakfast that week! I also made some of my favorite energy balls!
Sausage and Cheese Quiche
- 5-6 eggs
- 1 lb sausage crumbled and thoroughly cooked
- 1/2 cup Half and Half or whipping cream
- 1 1/2 cups of shredded sharp cheddar cheese
- 1/2 tsp dry mustard
- Dash of tabasco
- 1 uncooked pie crust
- Add salt and pepper to taste

Preheat oven to 350.

Top pie crust with sausage and cheese.

Mix the eggs and half and half in a bowl and pour egg mixture over toppings in the pie crust.

Bake in preheated oven for 30 minutes or until cooked through.

Remove from oven and allow to sit 5-10 minutes before serving.
INGREDIENTS:
- 1 cup (dry) oatmeal (I used old-fashioned oats, sometimes I use steel-cut)
- 1 cup unsweetened coconut flakes
- 1/2 cup peanut butter
- 1/2 cup ground flax seeds
- 1/2 cup semisweet chocolate chips or white choc chips
- 1/3 cup honey or agave nectar
- 1 tablespoon chia seeds (optional)
- 1 teaspoon vanilla extract
DIRECTIONS:
- Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour or more.
- Once chilled, roll into balls of whatever size you would like. Store in Tupperware and keep refrigerated for up to 1 week.
- Makes about 12 balls the size I make them.
